Once you make your own granola, you'll realise why you weren't ever doing it before. This ones includes the humble beet - a vegetable that's very much underrated in terms of the benefits it offers our bodies. 

An amazing antioxidant that beets hold is betalain - this is what helps bind toxins in the body while naturally eliminating them with ease. Beyond this, beets are anti-inflammatory, and helpful in managing cardiovascular disease and cancer.

This recipe is a red, rich, delicious breakfast treat or snack. Feel free to mix up the nuts or ratios depending on what you enjoy most.


1 beet
3 tbsp. coconut oil
3-5 tbsp. coconut milk
2 tsp. vanilla extract
4 tbsp. maple syrup
2 1/2 cups oats
1/3 cup buckwheat
1/3 cup coconut flakes
1/4 cup almonds, chopped
4 tbsp. chia seeds
3 tbsp. raw cacao powder
3 tbsp. cacao nibs
1/4 tsp. sea salt


Preheat oven to 350.
Peel and chop the beet, then add to a blender along with the coconut oil, vanilla, and maple syrup.
Add the coconut milk by the tablespoon until smooth. 
In a bowl, mix together oats, buckwheat, coconut flakes, almonds, and cacao nibs.
Pour the beet mixture over top, then add in the chia seeds and cacao powder until everything is coated.
Line a baking sheet with parchment paper, then evenly spread the granola mix on top.
Pop in the oven for 15 minutes, then stir around so everything bakes evenly.
Bake for another 10-15 minutes until it begins to smell and the edges are slightly golden.
Allow to cool before storing in the fridge for up to two weeks.
